Thai Chicken Pasta
My absolute favorite thing to eat at Cheesecake Factory is Thai Chicken Pasta. So, I came across a Thai noodle salad recipe, and with a little improvisation made a yummy dinner last night. The hubby was not too thrilled with it, but apparently he doesn't like Thai food.... period. So, I wasn't too discouraged about it.
I'm hoping somebody else will make it and let me know what you think. Please!!
Thai Chicken Pasta
What You'll Need:
3/4 c. CHUNKY peanut butter
1/2 c. Soy sauce
1 box (14.5 oz) Wheat THIN spaghetti
1 tsp. dried red pepper flakes
1/2 rotisserie chicken
2 green onions
1 shredded carrot
What to do:
Boil the noodles per package instructions and set aside. Don't drain yet. Mix the peanut butter, soy sauce, pepper flakes and 1/4 c. of the hot water from the noodles. Mix until blended well. You could bake your own chicken, but I found it much easier to buy a rotisserie chicken for $4 at Kroger. Shred up about half of the chicken, green onions and carrots. Drain your noodles and pour peanut sauce over while still hot. You have to work with it for a couple of minutes folding and stirring to get all the noodles coated. Add the chicken and veggies and mix it up. It's yummy! You can add soy sauce to taste.
It makes a ton..so I saved it for lunch for the next 2 days......very economical.

ReplyDeleteAnd yes, T, you should try it. Granted, it's not quite as good as a meal at Cheesecake factory...it's pretty good for homemade.
Plus, it's fun to experiment with new foods.
